McCOOK, Neb. — On the 1st of June 2025, Heaven welcomed a beautiful young lady, Elizabeth Esther Schaffert. God must have thought he needed her more in Heaven than earthside.
Elizabeth was born on a cold winter morning on Jan. 17, 2003 in Scottsbluff, Neb.
Elizabeth was the most loving soul you would ever find in someone so young. She was also the hardest working person, sometimes juggling 2-3 jobs while also attending high school and college.
With her huge heart, Elizabeth tried to rescue every animal she could and tried to keep all of them too. If you needed $10, Elizabeth would give you $20. She always had gifts that she made or bought that she knew her loved ones would adore. Elizabeth was the ultimate giver. She always had a funny story to tell and could always take a joke as well as dish it right back to you.
Elizabeth graduated from Hitchcock County High School 2021. While she was in sports, anyone would tell you, if there was someone on the floor, it would be Elizabeth. She then attended college at Curtis Agricultural College pursuing a degree to become a veterinary technician.
Those welcoming her into Heaven are her sister, Danielle, grandmother, Bonnie, Aunt Tonya and Dawn Gill, and great-grandfathers, Leo Rousselle and Don Hyde.
Those left to mourn this huge loss in our lives are her dad, Christian (Janelle) Schaffert; mother, Tammy Schaffert; brother, Mathew (Ella Harmon) Schaffert; grandparents, Faith Rousselle, Doug Hyde, Russ (Lisa) Schaffert; Aunts, Austyn (Ryan) with their four children, Paige (Adam) Bartlett with their two sons, Sue (Martin) Stu and sons, Deb (Rod) Spencer and family; Uncles, Warren Schaffert and sons, Bob (Terry) Rousselle and family and Kevin (Karma) Rousselle and family; great-grandmothers, Betty Rousselle and Vaunda Hyde; nieces, Alexa and Olivia Garza and nephew, Alejandro Garza.
To honor her love of animals, in lieu of flowers, donations may be made to the McCook Humane Society in Elizabeth's name.
Visitation will be Friday evening June 6, 2025 at Herrmann-Jones Funeral Chapel in McCook from 5-7 p.m. Funeral will take place on Saturday June 7, 2025 at 10 a.m., at Herrmann-Jones Funeral Chapel in McCook.
