Omega-3 and Protein-Packed Fresh Herb Breakfast Eggs
Makes 12 servings
You will need:
|6||hard boiled eggs|
|3||wedges of The Laughing Cow Smooth Sensations Cream Cheese Spread in Classic Cream 1/3 Less Fat|
|3||tablespoons extra virgin olive oil|
|4||slices cooked bacon, chopped fine|
|1||tablespoon Dijon mustard|
|1||tablespoon minced fresh tarragon|
|1||tablespoon minced fresh dill|
|1||tablespoon minced roasted red pepper|
Peel, then slice eggs in half lengthwise. Place yolks in mixing bowl. Set the whites on plate. (If they slide around, line the plate with lettuce leaves for serving.)
To the egg yolks, add remaining ingredients except sea salt. Mix with fork until evenly combined, breaking up egg yolks as you mix.
Spoon filling into hole in the egg whites. Sprinkle with crunchy sea salt.
