I clocked out Friday afternoon heading for my weekend, thinking I was "forgetting" something. Between sweat drenched mowing and sweet ice water breaks on Saturday I "remembered" what that something was. I'd forgotten to post a cheap, fast, easy recipe for my Friday post. I'd forgotten to post anything at all, people! (insert the sound of crickets chirping here) OK. So maybe you're not that jazzed up about the concept... however the least I can do is try for a little consistency here. Good golly we ARE talking recipes here!
Ok. So, here we go -
I'm calling this one the "Waii Wrap" (pronounced "Why-ee") because, Ha!, food combos of ham & pineapple bring certain thoughts of Hawaii to mind, no?
(ya, ya. more crickets chirping...)
Waii Wrap****** (See there? 6 stars - I'm telling ya...)
Flour tortillas (enchilada size)
pineapple cream cheese
lettuce leaves (any variety, I prefer Romain)
Ham slices (thin sliced)
Dill pickle spears (you can substitute dill pickle chips)
Spread pineapple cream cheese on flour tortilla.
Place a lettuce leaf on top of cream cheese toward one side (or the other) of the tortilla.
Place a slice (or 2!) of Ham on top of lettuce.
Put a dill pickle spear on top of Ham, about 1-1 1/2 inches from the edge of the tortilla that you've stacked up.
Roll tortilla, up, towards, and around the dill pickle spear (bringing all your layers to wrap around it as well) for a full turn so that you still have some tortilla left to wrap - it's at this point that you fold in both sides and then finish the wrap with the last roll.
Is that clear as mud???
Good Golly these things are tasty!
Somebody turned me on to this wrap at a pot luck and it's become a summertime favorite ever since.
(The kids I know really like these things too.)
