Lemon Party Cake
because, we are, after all is said and done, what we eat.

I've been thinking that Friday would be a good day of the week to post just such favorites of mine - or new ones that I'd like to try - because that gives me (and any of you, dear friends and neighbors) the weekend to test drive them.

With that in mind I give you the Lemon Summer Party Cake. It is a favorite summertime, & pot luck anytime, recipe.
Lemon Summer Party Cake
1 Box lemon cake mix
·Prepare according to package directions & bake in a 9x13" pan
·Cool 15 minutes
Meanwhile, mix together:
½ can (12 oz size) frozen lemonade concentrate, thawed (about ¾ C.)
¾ C. Powdered sugar
·Poke top of warm cake every ½ inch with long tined fork (wipe fork occasionally if cake is sticking)
·Drizzle lemonade mixture, evenly, over the top of the cake
·Run knife along sides of pan to loosen cake
·Cover & refrigerate 2 hours, or until chilled
Hint: You can freeze this cake to take along to summer outings.
Topping choices (after cake has chilled):
1. Sprinkle (shift) lightly with powdered sugar -- just before serving.
2. Ice with your favorite frosting & add sugar sprinkles, if desired.
This Cream Cheese icing goes nicely with the above cake:
1 8 oz package of soften cream cheese
1 8 oz package of cool whip
1 lb (4 C more or less) powdered sugar
Flavorings (i.e.: Vanilla, Orange, Imitation butter, Almond) as desired
Whip cream cheese together with powdered sugar using a kitchen mixer to thoroughly combine. Fold in cool whip topping by hand or use lowest speed on mixer. Flavor - to suit your tastes.
